Sure, the winter holidays are great for bringing people together, but you know what is arguably even better? Elvis. That’s right, those crooning notes are beloved by all types of people across all different backgrounds, and that’s why January 8th is a special day for Mendocino Farms. It’s the day Rock & Roll lovers across the world celebrate the birth of the one, the only, The King. At Mendo, it’s a day we celebrate year after year the only way we know how–with a sandwich.
This shot was from Christmas Eve, when we were busy getting a training video ready to pump our team up about our version of Elvis’ favorite sandwich. It’s called the PB3 because it’s filled with the three B’s: (peanut) butter, banana, and bacon! Of course we have to put our own twist on it, so we use our housemade peanut butter, caramelize the bananas first, add some sliced green apples and crushed honey roasted almonds, and layer it all onto Drago Bakery’s ciabatta before panini pressing the whole thing into a warm, toasty masterpiece. Vegetarians, you can even even enjoy this classic by asking to swap out the regular bacon with our tempeh bacon (which you can have maple-glazed or plain)!
While many in the city were getting ready for Santa, our fearless leaders Jim (VP of Training) and Harold (Director of Culinary Development) were getting ready for Elvis as they filmed the video breaking the sandwich down for our team, teaching them how to make and serve this fitting homage to The King.
