This sandwich pays homage to the brilliant simplicity of a club sandwich, yet it’s layered with a more adventurous and sophisticated depth of flavor derived from our chef’s culinary techniques and the incredibly high-quality ingredients we use.

First and foremost, the pork belly. For this sandwich we source all-natural heritage breed pork. Heritage breeds are those preserved from the time before large-scale meat producers started breeding animals specifically suited to industrial production conditions. Raised on smaller farms using humane methods, heritage pork has darker meat, streaked with flavorful fat that bestows an incredible melt-in-your-mouth quality.

Mendocino Farms Pork Belly Club Pork Lovers

Ours is cured overnight with brown sugar and kosher salt before being coated in a dark maple syrup glaze, slow roasted for four hours, sliced thickly, re-glazed, and then seared to caramelized perfection on a hot grill. Our chef created a creamy yet tangy whole grain mustard-lemon aioli to complement the pork’s richness, and simple slices of juicy tomato and crisp whole butter lettuce leaves help temper the sandwich’s decadence.
